Drying
Once the hazelnuts are harvested in the field, the crop is cleaned using an air cleaner that removes excess parts (stones, branches, etc.).
Once cleaned, the hazelnuts are left to dry in the courtyard on the sidewalk as was done in the past. Then they are stored in cages. After that, they go through the calibration and shelling process.
The Harvesting of Hazelnuts Cultivated in Piedmont and the Tonda Gentile Trilobata Variety is done mechanically or with vacuum machines; harvesting takes place in several stages starting from mid-August to allow the hazelnut to reach the right degree of ripeness
We are afamily-run farm, most of the field work is done by hand in an artisanal way, such as pruning and suckering, or with mechanical equipment such as shredding dry branches


Sizing and Shelling
Roasting
The first stage of processing consists of the Calibration of the Hazelnut in Shell, which in turn allows access to the first stage of hazelnut transformation.
After this process, the Hazelnut Shelling takes place, which is carried out through mechanical processing.
Roasting is certainly the most delicate phase of the entire production process. The largest fruits are roasted first so that their flavor and aroma stand out. Afterwards, they are manually checked twice for quality qualification. Finally, they are vacuum-packed to maintain the aroma and fragrance of the Tonda Gentile Trilobata Hazelnut.
The resulting products are pearls of taste and quality: Roasted Hazelnut, Hazelnut Flour, Chopped Hazelnut, Large Chopped Hazelnut. The finished products are the result of experience, professionalism, and passion that characterize the L'Arte della Nocciola Agricultural Company.
